If you are tasting Mallorca for the first time, it is best to start with three bodegas rather than one. White, rosé and red from family estates we have visited ourselves on the island.
The Talvin Blanco from Ses Talaioles is a white wine made from red grapes: Merlot, Manto Negro and Callet, pressed white, six months on the lees, mineral and saline. Cuvée #3 from Son Juliana in Santa Eugènia is certified organic and made in the Provençal style: dry, pale, with a delicate note of lavender. Finally, the Supernins from Son Vich is a single-varietal Manto Negro from the Ses Terrases vineyard at 400 metres, the highest Manto Negro site on Mallorca. So the same grape is in all three bottles, treated differently each time.
