A complex, elegant red wine, whose label features an old dry stone wall from the Ses Talaioles vineyards – a symbol of structure and complexity. Cabernet Sauvignon with Syrah and Merlot, aged in French oak and clay amphora. Can be stored for up to ten years.
Character
Deep ruby red with dark violet reflections. Intense aromas of blackcurrant and tomato leaf, accompanied by fresh tobacco, dark chocolate, and hazelnut. Complex and aromatic on the palate – black cherry, tomato leaf, and Mediterranean spices – with a full body and balanced phenolic richness. A wine of great persistence, elegance, and structure.
Vinification
Cabernet Sauvignon, Syrah and Merlot, hand-picked. Gentle, biodiversity-promoting soil cultivation; the harvested grapes are chilled for up to twelve hours. Fermentation without added sulfur using non-Saccharomyces yeasts in stainless steel tanks, extended maceration for twelve days, followed by malolactic fermentation. Matured for twelve months, 52% in French oak (new and one year old) and 48% in clay amphorae.
