The little brother of Sestal: a lighter, round and fruit-driven red wine that captivates with its freshness and minerality. Merlot with Cabernet Sauvignon and Syrah. An everyday wine – suitable for all dishes and also on its own.
Character
Intense red colour with violet reflections. Fresh aromas of blackcurrant and blackberry, with notes of liquorice, mocha, and tobacco leaf. Balanced and round on the palate, with fruity flavours of plum and cherry, a hint of chestnut, and Mediterranean spices. Mineral, multifaceted, with a harmonious interplay of acidity, alcohol, and tannin.
Vinification
Merlot (46%), Cabernet Sauvignon (34%), and Syrah (20%), hand-picked. Gentle, biodiversity-promoting vineyard management; the harvested grapes are cooled for up to twelve hours. Fermentation without sulfur addition with non-Saccharomyces yeasts in stainless steel tanks, extended seven-day maceration, followed by malolactic fermentation. Aged for twelve months, 77% in French oak (one and two years old) and 23% in clay amphorae.
Food Pairing
On its own or with light meals such as salads, pasta, and tapas. Excellent with spareribs, sobrassada, semi-cured cheese, and chocolate desserts.
