Vinification
Callet (100%) from biodynamic cultivation, manual selection of the best grapes. Extended post-fermentation maceration and malolactic fermentation in French oak barriques. Aged in 500-liter French oak barriques.
Food Pairing
A light-footed companion for the Mediterranean table. Wonderful with grilled vegetables, aged sheep's cheese and a selection of tapas, or with sobrassada on toasted rustic bread. Lightly chilled, it becomes the ideal patio wine for balmy evenings, when the food should remain light and the wine should accompany rather than dominate.
