A Viognier from the Serra de Tramuntana — a grape variety called “the grapes from hell” due to its difficult cultivation. Few hours of sunshine and deep soils ensure a long ripening period, high acidity, and aromatic balance. Full-bodied, salty, with a long finish.

Character
Golden yellow. On the nose, a balance of exotic fruits (pineapple, passion fruit), stone fruits (peach), citrus and nuts, with a delicate hint of honey. Full-bodied and smooth on the palate, with the salty note typical of the island. A powerful structure and freshness lead to a long, expressive finish.
Vinification
Viognier (100%) from the Ses Marjades vineyard, an east-facing slope of the Serra de Tramuntana with 16-year-old vines and low yields (5,000 kg/ha). The wine is made from two separate vinifications: Half of the grapes are directly pressed at a low temperature to obtain a pure, fresh must; after 72 hours of static pre-clarification, spontaneous fermentation with indigenous yeasts follows at 13°C. The second half undergoes 48 hours of cold maceration in stainless steel tanks to develop the typical Viognier structure and ferments at 16°C. Both batches are then blended according to the criterion of terroir expression. Before release, the wine ages for two months in the bottle.
