A fresh, finely structured red wine made from Gorgollassa, a rare indigenous grape variety from Mallorca. From the southern slopes of the Serra de Tramuntana, organically farmed, matured for eight months in French oak. Limited to 1,423 bottles.
Character
Bright cherry red. The nose offers fresh fruit, balsamic notes, and floral nuances. On the palate, it is fresh with a medium structure.
Vinification
Gorgollassa (86%) and Syrah (14%) from organic farming, hand-picked into 15kg boxes, with selection already taking place in the vineyard. Destemmed and transferred by gravity with whole berries into the fermentation vessel. Gentle pump-overs for ten days, followed by soft pressing. Eight months of aging in 500-liter French oak barrels.
Food Pairing
A red wine for light dishes: grilled vegetables, flame-grilled lamb chops, Tumbet or Arròs brut. Also good with poultry and mild sheep's cheese. Serve lightly chilled.
