Red wine from Vins Miquel Gelabert, made from the island varieties Callet, Manto Negro and Fogoneu with Cabernet Sauvignon. Spontaneously fermented, aged for twelve months in French and American oak. Ripe fruit meets eucalyptus, menthol and liquorice. Silky, complex, with a long finish.
Character
A deep, intense cherry red, clear and brilliant. On the nose, ripe fruits, combined with notes of eucalyptus and menthol, distinctly balsamic, with a hint of liquorice and a touch of violet. On the palate, a very soft, velvety start, balanced in sugar, acidity and tannin, velvety and complex, with a long, pleasant finish.
Vinification
A cuvée of the indigenous grape varieties Callet, Manto Negro and Fogoneu, complemented by Cabernet Sauvignon. The wine spontaneously ferments in stainless steel tanks and then matures for twelve months in French and American oak barrels before bottle aging prior to sale. A wine with a high proportion of island varieties, as produced by only a few wineries.
Food Pairing
Pairs well with game dishes in sweet and sour sauce, aged cheeses, and all kinds of roasts.
