Character
A delicate, fine, and light wine with a salty and aromatic finish. The nose is dominated by nuances of white fruits, apple, and pear.
Vinification
Premsal (100%) from biodynamic cultivation, simply prepared to allow the fruit to express itself freely. The destemmed berries were pressed immediately after manual harvesting, and the must was clarified 48 hours later, followed by fermentation at 16 °C. After alcoholic fermentation, the wine was racked and rested on its lees until shortly before bottling.
