Escursac is one of Mallorca's rarest grape varieties. A fruit-driven, light red wine from the southern slopes of the Tramuntana mountains, organically grown, with a quarter fermented as whole clusters. Limited to 1,800 bottles.
Character
Brilliant cherry red. Aromas of red berries with fine floral notes. Fruit-driven, with light structure.
Vinification
Escursac (97%) and Syrah (3%) from organic farming, hand-harvested in 15 kg boxes, selection in the vineyard. Fermentation with 25% whole clusters, the rest destemmed and as whole berries. Gentle pump-overs for ten days, followed by gentle pressing. Eight months of aging in used oak barrels (225 l and 500 l, third and fourth use).
Food Pairing
Pairs well with appetizers and tapas, sobrassada, air-dried ham, and grilled fish. Its light body also complements dishes typically paired with white wine. Serve chilled.
