A mineral, saline white wine made predominantly from red grape varieties – Merlot, Manto Negro and Callet, vinified white. Fresh, citrusy and chalky on the finish. Matured for six months on the lees.
Character
Very bright straw with green reflections. Mineral nose with prominent citrus notes, nuances of melon and ornamental pear, and a hint of fennel seed. Refreshing and elegantly salty on the palate, citrusy with appealing acidity and a mineral-chalky finish.
Vinification
Merlot (64%), Manto Negro (18%) and Callet (18%), hand-picked and vinified as white wine. Manual selection before destemming and crushing, immediate pressing in a basket press. Fermentation of the juice in stainless steel tanks at 14–16 °C, followed by cool storage; filtration only shortly before bottling. Six months on the lees.
Food Pairing
Solo, or as an accompaniment to light dishes such as fish, seafood, and salads.
