Character
Clear, pale yellow with a greenish rim. Floral aromas of white lily and white fruits, peach, apricot, pear, with citrus notes. Fresh and flowing on the palate, with a pleasant, long-lasting acidity.
Vinification
Malvasía de Banyalbufar (100 %) from organic farming, hand-harvested in the third week of August. Cold pressing, pre-clarification, fermentation at 16 °C over twenty days. Four months on fine lees, two of which with bâtonnage. Subsequently six months in 500-liter French oak barrels. The wine is not stabilized and only lightly filtered; precipitates are possible and do not indicate a quality defect.
Food Pairing
The vibrant acidity complements fish, seafood, and goat cheese. Also enjoyable on its own as an aperitif.
