Character
A pale yellow with golden reflections. The nose is complex and elegant, with notes of smoke and spices, finely interwoven with honey and citrus. On the palate, it is full and well-structured, with a firm yet fresh attack and a mint note, a perfect interplay of power, finesse, and silkiness. An elegant, pleasantly aromatic finish.
Vinification
Single-varietal Chardonnay from Manacor. The Selecció Especial differs from the classic Chardonnay Roure through more rigorously selected grapes and first-class special barrels. The wine ferments in new French oak and ages for ten months on its fine lees. It undergoes malolactic fermentation. A riper, richer wine made for long aging.
Food Pairing
Pairs well with fish in sauce, fish stews, and baked fish, as well as with white meat. Its fullness and body from barrel aging also complement rich, creamy dishes.
