Character
Straw yellow with golden reflections. Fruity aroma: pineapple, pear, and banana combine with the spicy notes of Manto Negro and sweet, candied undertones. Full-bodied on the palate with a slightly salty character. Refreshing, complex, long, and deep.
Vinification
Manto Negro from the coolest sites along the dry-stone walls (marges) of the Superna Valley, harvested with great care to ensure the skins don't break and impart no color to the wine. A "Blanco de Negras" in its purest form. The grapes are cold-pressed very quickly, resulting in low yields. Fermentation takes place over 25 days at a very low temperature with native yeasts obtained via "pie de cuba." Malolactic fermentation is not carried out to preserve freshness and character.
