A single-varietal Manto Negro from Ca Sa Padrina, grown on a small single vineyard in the village of Biniali. The wine is organically produced with minimal intervention, semi-carbonically fermented, and aged for eight months in used French oak. This makes it light and juicy, with vibrant red fruit. A small production of only 2,000 bottles.

Character
A bright, transparent cherry red. An approachable Manto Negro with juicy red fruit and the lively, fresh character that semi-carbonic maceration brings. Light-footed and thirst-quenching.
Vinification
Pure Manto Negro, Mallorca's indigenous red grape variety, from a plot of just under one hectare in the village of Biniali near Sencelles. The soils are Call Vermell, a reddish, iron-rich clay soil with a stony surface. The wine is made organically and with minimal intervention. The grapes are hand-picked and destemmed very gently, then semi-carbonically fermented and gently pressed. It then matures for eight months in used 500-liter French oak barrels.

A versatile, light red for everyday cooking. It pairs with appetizers, cured meats and cheeses, pasta, white meats, and Mediterranean vegetables.
