A red wine made from Merlot, Manto Negro, and Syrah from Bodega Ca Sa Padrina, grown on the red clay soils in the interior of Mallorca. Each variety is matured separately before the wine is aged for twelve months in French oak and an additional six months in the bottle. This gives it structure, depth, and a long finish. A small production of only 2,000 bottles.
Character
A dense red with dark fruit. A structured red with depth and length, shaped by maturation in the barrel. Powerful and balanced at once.
Vinification
A cuvée of Merlot, Manto Negro and Syrah from inland Mallorca near Sencelles, grown predominantly on Call Vermell, the reddish clay soil of the region. The grapes are hand-picked into crates. Each variety and parcel is fermented separately in temperature-controlled stainless steel tanks, followed by malolactic fermentation. The wine then matures for twelve months in 500-liter French oak barrels and an additional six months in the bottle.
Food Pairing
A full-bodied red wine for hearty cuisine. It pairs well with stews, grilled red meat, and aged cheese.
