A spicy, mineral rosé in a pale onion skin color. Merlot, Callet, and Manto Negro, aged six months on the lees. Fresh, citrusy, and elegant.

Character
Color of pale onion skin. Mineral nose of damp limestone, with hints of white peach, fennel seed, raspberry and pear and floral notes of lily blossoms. On the palate spicy, mineral and citrusy, with appealing acidity and a note of kumquat.
Vinification
Merlot (65%), Callet (24.5%), and Manto Negro (10.5%), hand-picked. Manual selection before destemming and crushing, 6–12 hours of cold maceration at 4–6°C in a protective atmosphere. Juice fermentation in stainless steel tanks at 16°C, followed by cool storage; filtration only shortly before bottling. Six months on the lees.

Solo or as an accompaniment to fresh seafood and dishes with an Asian influence.
